Ours is a family run farm, specializing in sheep. (The only animals we raise are these wooly critters and some cats.) We believe in treating these animals with respect in keeping with their role of providing us with milk, meat and wool, and thereby giving us a living.
Our aim is to provide them with as good a life as we are able while they are with us. So they graze in the summer but have shelter from the winter storms. Our Baas are then fed our home-grown grain, hay and baylage. Antibiotics are not used as a growth promoter and hormones are never given. However care is taken to provide lots of good food and a stress free environment (we do not keep a dog to “herd” the sheep). Our lamb, hung for one week, is lean and tasty. Lamb is the most digestible of meats and contains the highest proportion of conjugated linoleic acid of all ruminant meats and milk. We aim to provide our customers with as wide a variety cuts as they request. We also provide freezer orders and barbecue lambs. Look up lambrecipes.com for more ideas. We have started processing some of the meat into a variety of pies, including shepherd’s pies, made with non-gluten products for those allergic to this ingredient.
As a member of the Ewenity Dairy Co-operative, we also produce a variety of sheepmilk products: yogourt, brebis (sheepmilk chevre), feta, Ramembert (sheepmilk camembert) and Eweda (both pasturised and raw milk). Eweda is a medium hard cheese made to the gouda recipe with sheepmilk. Ewenity.com will provide more information.
Sheep are shorn annually and some of the wool is washed, carded, spun and sold in St. Lawrence Market in 4 oz. skeins. The fleeces are also processed into warm soft rugs (some washable), wonderful for babies, preventing bedsores or as a luxury covering on beds or loveseats.
Finally, we also provide a wide variety of cow’s milk cheeses, including old cheddars and some specialty cheeses from Quebec. |
